The grease trap storage tanks receive waters from dishwashers, sinks, and floor drainers and acts as a reservoir slowing and holding the waste waters and food solids that enter. As the waste water cools, the fats, oils, and grease harden and being lighter they float to the top, with waste water at the center, and the food solids settle to the ground. The waste water is then forced through the grease tap from the primary tank to the secondary tank and onto the sewer or septic. The fats, oils, and grease and solids remain in the tank increasing in volume on a day to day basis.
